Hi Susan. I love using knitting bowls when I knit and can only speak to what I prefer. Actually, my very favorite is a shouldered jar with a narrow opening large enough to squeeze a ball of yarn through, but not so large that the ball pops out when I tug on it. This I can place on the floor at my feet and knit away. For the bowls, I like a good thick base and I leave extra clay at the bottom so it has enough weight to stay put while I'm knitting. Yes, the inward rim is a big help I think, but I see many that are shaped more like serving bowls.

I prefer slots to holes simply because I may want to switch to a smaller bowl once my ball of yarn dwindles and the slot makes it possible to do that. I keep meaning to put little semi-circle cutouts on the rims to serve as a resting place for my needles, but I forget. Something similar to a rice bowl that has cutouts on one side and 2 small holes on the other for chopsticks. Does this all make sense?

For someone who does color work, you could make a larger bowl and have multiple slots or holes for multiple balls of yarn. I've also seen bowls with lids that serve to keep playful little cat paws away from the yarn balls. Smooth bottoms are good or you could glue felt on the bottoms. I haven't done this, but think I may start offering it if the customer wants it. I hope this helps.
